  9. 3 onions, chopped.
  10. 1 small ginger, chopped.
  11. 1 bunch coriander, chopped.
  12. 1 bunch parsley, chopped.
  13. 3 tbsp mirin (optional).
  14. 3 tbsp chana masala spice mix.
  15. 3 tbsp paprika.
  16. 2 tbsp whole black peppercorns.
  17. 5 small dried chilies, crushed.
  18. 2/3 cup olive oil.
  19. 1 salt, to taste.
  20. 1 ground black pepper, to taste.

  1. sauté garlic, onion, bell pepper, ginger and coriander in olive oil, adding pepper, salt & paprika (PSP) in a deep saucepan.
  2. once onions become soft, add mirin and wait until alcohol is evaporated..

  4. once tomatoes liquefy, add dried chilies and chickpeas..
  5. let mixture boil, then set on low to low medium heat, and let simmer for 20-40 minutes..
