- 1 lb ground beef (80/20).
- 2 links (1/4 lb) beer bratwurst.
- 1 large sweet onion, finely chopped.
- 2 cloves garlic, minced.
- 1 tbsp tomato paste.
- 1 can Mexican beer, such as Modelo Especial.
- 1 (28 oz) can whole roasted tomatoes.
- 1-2 cups chicken or beef stock.
- 1 can ranchero-style pinto beans (like La Costeña brand).
- Spice mix.
- 1 tsp Aleppo chile powder.
- 1 tsp Chipotle chile powder.
- 1/2 tsp Cayenne pepper.
- Pinch red pepper flakes.
- 1 Tbsp chilli powder.
- 1 tsp unsweetened cocoa powder.
- 1/2 tbsp ground cumin (comino).
- 1 tsp oregano.
- 2 tsp brown sugar.
- 1 tsp instant coffee (or 1 shot prepped espresso).
