Ingrédients de Tortellini alla boscaiola:

  1. 400 g tortellini (any kind but al proscuito is the best).
  2. 100 g mushrooms - porcini if possible.
  3. 50 g pancetta.
  4. Small chopped onion.
  5. 2 tablespoons passata sauce.
  6. Olive oil.
  7. Glug of white wine - optional.
  8. to taste Salt.
  9. Parmesan to serve.

Comment cuisiner Tortellini alla boscaiola:

  1. Bring a pot of salted water to the boil. Chop the mushrooms into small pieces. Cook onion gently in olive oil.
  2. When onions start to soften, add the mushrooms and turn up the heat. After 2-3 minutes, add the chopped pancetta. After about 3-4 minutes add wine and let it evaporate.
  3. Now add passata and turn down the heat and simmer while you cook the pasta, fresh tortellini takes 2 minutes.
  4. Drain after 2 minutes, add to sauce, mix well and serve with grated parmesan.
