Ingrédients de Al Yakhni Kashmiri Lauki Sabzi:
- 400 gm Bottle Gourd/lauki.
- 1 cup curd.
- 1 onion paste.
- 1 tsp cumin seeds.
- 1/2 tsp hing(asafoetida).
- 1 tsp cumin powder.
- 1 tsp coriander powder.
- 1 tsp fennel seeds powder.
- 1 tsp dry ginger powder.
- 1 1/2 tsp red chilli powder(optional).
- 1/2 tsp turmeric powder.
- 1 tsp garam masala.
- 1 tsp kasuri methi.
- 1 tsp ginger garlic paste.
- to taste Salt.
- 2 tbsp Oil for frying.
- 2 tbsp malai.
The curry is flavored with fennel, ginger,cardamom and regular spices used in Kashmiri cuisine. Traditionally it is cooked in mustard oil but you can any. - Peel and chop bottle gourd in big pieces..
- Deep fry in medium hot oil till golden brown..
- Heat 2 tbsp oil in a kadai add cumin seeds, when it crackle add onion paste and cook 1 minute. Add ginger garlic paste and saute..
- Add haldi powder, hing, red chilli powder, cumin powder, dry ginger powder, fennel seeds powder,coriander powder, garam masala, kasuri methi, salt,curd and malai, mix well and cook 1 minute, keep stirring..
- Now add 1/2 cup of water and fried bottle gourd..
- Now cover and cook for 5 minutes on low flame..
- Serve hot with roti..
