  7. 1 tbsp all-purpose flour.
  8. 1 tbsp paprika.
  9. 1 tsp dried dill.
  10. 1 cup beef stock.
  11. 1/2 cup sour cream.
  12. 2 tbsp fresh dill (optional).

Paprika is a spice that is often overlooked by cooks. The only time we think of paprika is when we make potato salad or chicken, using the spice for color to make drab dishes look alive. But paprika is an interesting spice that can be used for much more than a coloring agent. Paprika is a ground spice made from a mixture of dried peppers in the Capsicum anuum family, including hot chili peppers, cayenne peppers, poblano peppers, aleppo peppers, sweet peppers, and others.

  1. Heat oil in med-high pan.
  2. Season pork chops with salt and pepper to taste.
  3. Saute chops until cooked through, turning as required. Anywhere from 2-6 minutes a side depending on thickness.

  5. Remove cooked chops and set aside. Cover with foil and let rest while you finish the sauce..
  6. Reduce pan to medium heat, Melt butter in pan, add onions, saute until tender, about 5 minutes.
  7. Add mushrooms, continue cooking until tender, about 5 minutes.
  8. Add tomato paste, flour, paprika, dried dill, and salt and pepper to taste.
  9. Stir into mushroom/onion mix, tomato paste, flour, dill, paprika, about 15 seconds.
  10. Add stock and deglaze pan.
  11. Simmer until sauce thickens.
  12. Remove from heat, stir in sour cream and fresh dill (if using).
