  1. 1 T peanut oil.
  2. 1 medium onion, diced.
  3. 1 clove garlic, minced.
  4. 1 T ground coriander.
  5. 2 t ground cumin.
  6. 1 t ground turmeric.
  7. 1/2 t ground cayenne pepper.
  8. 6 T tomatoes, chopped.
  9. 1 c water.
  10. 1 can (15 oz) chickpeas, drained and rinsed.
  11. 2 small potatoes, cut into small cubes.
  12. 1 T amchoor powder.
  13. 2 t paprika.
  14. 1 t garam masala.
  15. 1/2 t salt.
  16. 1/2 lemon, juiced.
  17. 2 t ginger root, minced.

  1. Heat oil in large, deep frying pan over medium-high heat..

  4. Add tomatoes. Cook for 5-10 minutes..
  5. Add water and chickpeas. Cook for 1 minute, slowly stirring..
  6. Add remaining spices, salt, and lemon juice. Cook for 10 minutes, covered..
  7. Remove cover and stir in ginger..
  8. Remove from heat. Serve over basmati rice..
