For those of you unfamiliar with Nuoc Cham, it is a flavorful Vietnamese sauce used to season fresh salads, spring rolls, and noodle bowls.
This is a recipe the classic Vietnamese dipping sauce from Andrea Nguyen, author of Into the Vietnamese Kitchen, who suggests adding more lime juice, fish sauce or sugar to suit your taste and achieve your preferred balance of sour, sweet and salty.

- 1/2 cup + 2 Tablespoons water.
- 3 Tablespoons fresh lime or lemon juice.
- 1/4 cup + 1 Tablespoon sugar.
- 1-2 cloves garlic, crushed.
