- For the garam massala mixture: (makes 1/2 cup).
- 2 tablespoons ground cardamom, seeds.
- 1 cinnamon stick, broken up.
- 2 tablespoons cumin, seeds.
- 1 teaspoon whole cloves.
- 2 tablespoons black peppercorns.
- 1 teaspoon nutmeg, grated.
- 2 tablespoons dried coriander, seeds.
- Special equipment: an electric coffee/ spice grinder.
