Superhealthy Bran Muffins TO MAKE GLUTEN FREE: I have not tried to make these muffins gluten free. It kind of defeats the point of a bran muffin. However, I do think you could sub all purpose flour or chickpea flour for the whole wheat pastry flour if you are looking for a flour.

Ingrédients de Superhealthy Bran Muffins:

  1. 2 eggs.
  2. 6 tbsp oat bran.
  3. 3 tbsp wheat bran.
  4. 125 ml low fat yogurt (0,1% fat).
  5. 1 tbsp 0 cal sweetener or agave.
  6. 1/2 tsp orange extract.
  7. 10 grams baking soda.
  8. 10 grams cream of tartar.

These are delicious little gems, even my boyfriend who detests low fat foods loves them! I'm extremely health conscious so these are perfect with almost no fat, and are super healthy because of the bran. They turn out super moist and delicious and reheat well in the microwave. You can substitute whole wheat flour for white if you wish and they will still be delicious.

  3. Bake at 180°C for 45 minutes.

They're super moist, flavorful and loaded with bran and oats. Thanks to all the bran and oats, they're deliciously full of fiber.
