  8. 4 eggs.
  9. 1 package matchstick carrots, chopped (or 2 cups grated).
  10. 8 oz can crushed pineapple.
  11. 1 cup chopped walnuts.
  12. 2 tsp vanilla.
  13. Frosting:.
  14. 8 oz cream cheese.
  15. 1 \2 cup softened butter.
  16. 1 cup confectioner sugar.
  17. 2 tsp vanilla.

  1. Preheat oven 350°.
  2. Sift together dry ingredients.
  3. Blend in oil, sugar and eggs.
  4. Beat until well blended.
  5. Mix in carrots, pineapple with juice, nuts and vanilla.
  6. Pour into 2 greased 9" cake pans or a well greased bundt pan.
  7. Bake 30-45 minutes, or until cake tester comes out clean.
