Ingrédients de Risotto Cacio e Pepe:

  1. 350 g risotto rice.
  2. 1-1.2 litres hot stock.
  3. Small chopped onion.
  4. 60-70 g grated Pecorino.
  5. Plenty of black pepper.
  6. to taste Salt.
  7. Knob butter.
  8. Olive oil.
  9. Glug of white wine.

Comment cuisiner Risotto Cacio e Pepe:

  1. Fry onion gently in olive oil. When softened, add rice and cook for a min or so. Add wine and let it evaporate.
  2. Add about 3/4 of the stock, Salt and simmer for about 20 minutes until rice cooked. Add a little stock if dry. Now add cheese, black pepper and butter. Stir until creamy.
  3. Serve with more black pepper and Pecorino if you fancy it 😄.
