Ingrédients de Pepes Ikan Cod - Steamed Cod:
- 2 pieces Cod Fillet.
- Leaf Banana.
- 3 stalks spring onions, cut in 1cm length.
- 1 stalk lemongrass, finely chopped.
- 6 cherry tomatoes, cut in a half.
- Pack baby corn, cut in 1cm length (this is optional. The reason am using it cos am clearing out my fridge).
- Bunch basil.
- 2 kaffir lime leaves.
- 2 bay leaves.
- 1 egg.
- 3 tbsp oil.
- Spice Paste :.
- 5 shallots.
- 3 garlic cloves.
- 2 bird eye chilies, to get a little kick or skip.
- 5 candlenuts.
- 1 thumb size of ginger.
- 1 thumb size of fresh turmeric or 1 tsp turmeric powder.
- 1 tsp coriander powder.
- 1 tbsp salt.
- 1 tbsp sugar.
Comment cuisiner Pepes Ikan Cod - Steamed Cod:
- Pat dry the fish really well and set aside.
- Grind the spice paste ingredients using food processor until smooth. Put of oil to loosen the texture. Heat 3 tbsp oil in a pan. Sauté the spice paste, finely chopped coriander, kaffir lime leaves and bay leaves until fragrant. Add more salt or sugar if needed. Put a side and let it cool..
- Once the spice paste is cooler, add the egg, spring onions, tomatoes, baby corn and basil and mix well..
- Grab one piece of banana leaf (the size enough to wrapped 1 cod fillet). Add 1 tbsp the paste mixture. Add the fish on top then cover the fish with 2 tbsp paste mixture then wrapped the fish and secure on both edge with clean tooth paste. Repeat the same step with the other fish. Then steamed for 30 minutes..
- Grilled the steamed fish on the grilled pan for about 10-20 minutes..
- Serve with the warm steamed rice.
